Is there a reason for the sudden cancellation of all these projects, especially since they all seem to already have some amount of content in them?

I think the burnout comes from trying to do too much. Stick with one to completion and you may find that the end is gratifying enough to keep going; a cyclical reward of deed.

I avoid burnout by either making smaller packs or single maps. There's no way I could stay motivated for a 3-5 year project. Concentrate on making a quality single map release before taking on multi-map projects.

There is no way you are going to produce a "The last Fortress" or anything near that quality, and certainly not a large mappack (see how long Projecy Xenome takes as a one man job).
As implied by others : make a couple of single maps with some objectives which you haven't mastered yet and set those as goals.
You will find more gratification in succeeding single goals than in producing a map (or a pack) in which "only" 5 of your 10 objectives were attained.
